Herbert Park in Ballsbridge, Dublin is hosting the festival of ‘dirty grilling,’ hot smoking and a chilli eating challenge – from this Thursday to Sunday. It is the fourth Big Grill Fest and here are all the details you need to know about this year’s BBQ fest.
This time there is Bastecamp program that will offer a series of talks, discussions, and master classes running over the four days of the festival. Nick Solares of The Meat Show on Eater will be the anchorman here and you can check out the full program here.
Send new addition to the event is the Whole Dexter Feast, in which festival co-founder Andy Noonan will collaborate with Matt Williams of Oxford Charcoal and Nick Weston of Hunter Gather Cook to prepare a whole steer.
Ramael Scully, head chef at NOPI in London, along with Josh Katz of Berber & Q (in London˘) will cook vegetables and meat – to be precise they’ll cool cauliflower shawarma and smoked goat rendang on Sunday.
You can also see a strong international line-up in the event. There will be Andy Ricker, chef/owner of the Pok Pok chain of restaurants in Portland, Oregon, and New York, which specializes in northern Thai street food. Even Robin Gill of London restaurants will be barbecuing lamb heart and serving it with smoked aubergine, toasted onion seed, and mint. He will also prepare Achill Island lamb rib with fennel kimchi this Saturday.
Likewise, more renowned faces will be seen at the event with their special recipes. Furthermore, the fest will also offer loads of music, food stalls, craft beers, and drinks. The event started this Thursday at 12.30pm and admission is free before 2 pm on Thursday and Friday (€15 after that time). On weekend, you have to buy tickets for €18.
