Fernando Carillo, the pitmaster behind the Ragtop Fern’s BBQ, has started this one-man driveway operation in the northeastern stretch of Koreatown, L.A. For barbecue enthusiasts. This spot is turning out some of the city’s best underground barbecue. From a distance, you can see a queue waiting outside of a gated apartment complex.
A smoker next to them is exhaling the last of its coals & pecan wood. Fern is often busy with his customers explaining the menu. Their menu includes brisket, ribs, pulled pork, and many mouth-watering delicacies for the lovers of smoked meat. However, their menu keeps changing depending on what Fern wants to cook or the demand of a particular recipe.
By looking at the slice of BBQ meat, you’ll be happy to see the grilled and burned color on the outside. Their meat is tender, not dry as the bark and tastes delicious with the flavors of salt, pepper, and garlic. The smokey taste, of course, brings it all together.
Fern has his own special ingredients for pulled pork and it has a distinct flavor. It’s good on its own from the smokey flavor of the meat and served with tangy BBQ sauce.
